5 Ways to Season Your Pumpkin Seeds

Some new ways to spice up the seeds that everyone “loves” for the hot second after carving their jack-o-lantern.

You've gone through the trouble of carving your jack-o-lantern. You're staring down at the seeds knowing you should be coveting them like Susie Q down the block. But, meh. You'll roast them. You'll eat a few to try and convince the kids they're a delicious treat.The kids will spit them out. You'll stick them in a ziploc and forget they're in the cupboard until you need that space for your Christmas sprinkles. Until now. Here are some new ways to prepare those seeds that Susie Q may not even know about.

Ingredients:

Pumpkin Seeds
Salt
Olive Oil
Ground Cinnamon
Sugar
Brown Sugar
Chile Powder
Smoked Paprika
Garlic Powder
Grated Pamersan
Dried Oregano

Toasted Pumpkin Seeds

  1. Set oven to 300 degrees F
  2. Separate the pumpkin seeds from the pumpkin and rinse well in a colander
  3. Boil the seeds for 10 mins
  4. Remove from water and place into a bowl, do not pat dry.
  5. Toss the seeds with your favourite spice blend (reccomendations below).
  6. Place seeds onto an oiled backing sheet
  7. Roast for 30 mins.

Spice Blends

  • Classic: Olive Oil + Sea Salt
  • Sweet: Cinnamon + Sugar
  • BBQ: Chile Powder, Smoked Paprika, Garlic Powder + Brown Sugar ( add cayenne if you like a little spice)
  • Italian: Grated parmesan cheese + Dried Oregano
  • Salt + Vinegar: Add 3 tbsp of white vinegar to the boiling water, toss with sea salt before toasting.

 

How the Kids Can Help

The kids love the gross part! Separating the seeds from the pumpkin. 🙂 Also, put the spices in a ziploc bag. Have the kids add the seeds to the bag and give it good old shake to coat the seeds with the spices.

 

Pumpkin seeds are a really great source of nutrients. Long recognized for their antioxidant support, but also a super rich source of magnesium. Alone or on a salad, they really are a food we should find more ways to enjoy.
